Grilled Mango Crepes with Berry Compote

Happy Sunday herbivores! It has been awfully rainy today, the clouds are casting a gloomy gray glow on the neighborhood. Since it is so cold and wet out there I decided a warm breakfast would be just the thing to comfort me this morning. So, I headed to the kitchen and whipped up some mighty delicious grilled mango crepes and poured ooey gooey sweet berry compote over the top. Sounds good, right? Well, it was! This would be a good one to serve up to any overnight guests this holiday weekend. h_is_for_herbivore_berry_compoteI am happy to say that these crepes received a big thumbs up from the boy. Normally, I wouldn’t say that being boyfriend-approved is that great of an accomplishment, but since X doesn’t like mangoes, I was over the moon. grilled mango crepes with berry compote h is for herbivore 1grilled mango crepes with berry compote h is for herbivore 2 Ingredients
For the crepes:
1 cup flour
1 cup non-dairy milk
3 tablespoons Earth Balance spread, melted (plus a little more for frying)
1 teaspoon vanilla extract
For the compote:
3 cups berries of your choice (I used blackberries, raspberries, and blueberries)
2 tablespoons granulated sugar
1 tablespoon lemon juice
For the grilled mango:

1. Place flour, non-dairy milk, vanilla, and melted Earth Balance in a blender and blend until batter is smooth. Place in the refrigerator for about 5 minutes before using.
2. Place the berries, sugar, and lemon juice in a small saucepan and cook over medium-high heat until berries are fragrant, sugar is dissolved, and juice is simmering. Turn off the heat and cover with a lid to keep warm.
3. While the compote is coming together, heat a grill pan over medium heat. Slice the mangoes and place in the pan. Grill until mangoes begin to caramelize and char a bit. Take off heat and set aside.
4. Take the crepe batter out of the refrigerator and give it a good stir. Heat a pan over medium heat and melt 1/2 tablespoon of Earth Balance in the pan. Pour about 1/2 cup of the batter into the pan and swirl around until it evenly coats. Cook until bubbly, flip and cook a little more! When crepe begins to brown, slide it onto a plate and repeat until out of batter.
TIP: For a less chunky compote, mash berries with a wooden spoon or masher while they are cooking. Don’t fret if your first few crepes look a bit rough until you get the hang of it…the dog needs a few too, right?
